- self-raising flour280g
- brown sugar180g
- butter, melted125g
- egg2 piece
- yogurtor sour cream80ml
- vanilla extract1 tsp
- cinnamon1 tsp
- baking soda½ tsp
- salt½ tsp
Method
- 1
Preheat oven to 170°C; grease and line a loaf tin.
- 2
Mash very ripe bananas with a fork in a large bowl.
Black-spotted bananas — the riper the better.
- 3
Whisk in melted butter, brown sugar, eggs, vanilla, and yogurt until smooth.
- 4
Sift in self-raising flour, baking soda, cinnamon, and salt; fold gently until just combined.
Don't overmix or the loaf turns rubbery.
- 5
Pour into the tin and tap on the bench to settle.
- 6
Bake until a skewer comes out clean, about 55–65 minutes; cover loosely with foil if browning too fast.
- 7
Cool in the tin 10 minutes before turning out onto a rack.
Best toasted with butter the next day.
