Ingredients
- potato, cubedwaxy / chat1000g
- egg, hard-boiled, chopped4 piece
- bacon, diced and crisped4 piece
- mayonnaise150g
- sour cream3 tbsp
- dijon mustard1 tsp
- white vinegarover warm potatoes1 tbsp
- chives, snipped¼ bunch
- salt1 tsp
- black pepper½ tsp
Method
- 1
Cube unpeeled waxy potatoes and put them in a pot of cold salted water; bring to a boil and simmer until just tender.
Starting in cold water = even cooking.
- 2
Drain and let steam-dry for 5 minutes; drizzle with vinegar while warm so it soaks in.
- 3
Hard-boil the eggs (10 minutes), cool in ice water, then peel and roughly chop.
- 4
Crisp diced bacon in a dry pan until golden; drain on paper towel.
- 5
Whisk mayonnaise, sour cream, dijon, salt, and pepper into a dressing.
- 6
Gently fold dressing through warm potatoes with bacon, eggs, and chopped chives.
Folding warm helps the flavour soak in.
- 7
Cover and chill at least 30 minutes before serving.
