Ingredients
- ground beef, formed into 2 balls80/20 chuck400g
- cheddar, slicedamerican works too2 piece
- hamburger bunsoft, not crusty2 piece
- onion, thinly sliced½ piece
- pickle, sliced4 piece
- ketchup2 tbsp
- mustardyellow1 tbsp
- salt½ tsp
- black pepper¼ tsp
Method
- 1
Form ground beef into loose balls — do not pack tight.
Compressed beef = dense, tough patties.
- 2
Heat a cast iron pan smoking hot.
- 3
Place beef ball on the pan; smash flat with a sturdy spatula and season top with salt and pepper.
Smash hard for that craggy lacy crust.
- 4
Cook 2 minutes for a deep crust; flip, lay cheddar on top, and cook 1 more minute.
- 5
Toast buns face-down in the rendered beef fat until golden.
- 6
Build the burger: bun, ketchup, mustard, patty, sliced onion, pickle, top bun.
Salt the patty after smashing — it draws out moisture if seasoned earlier.
