- white wineor dry sherry150ml
- baguette, slicedday-old is best1 piece

Method
- 1
Slice onions thin; melt butter in a heavy pot and add onions with a pinch of salt.
- 2
Cook onions over medium-low heat, stirring often, until deep mahogany — at least 45 min.
No shortcut. The colour is the flavour.
- 3
Deglaze with white wine; let it reduce away.
- 4
Pour in beef broth; add thyme and bay leaf; simmer 30 minutes.
- 5
Toast slices of baguette; top with grated gruyère and broil until bubbly.
- 6
Ladle soup into oven-safe bowls; float the gruyère toasts on top and serve.
Or run filled bowls under the broiler if you want extra cheese pull.
