Ingredients

  • green papaya, shredded300g
  • tomato, halvedcherry preferred4 piece
  • garlic3 clove
  • green chilithai bird if available2 piece
  • peanuts, crushedroasted40g
  • fish sauce2 tbsp
  • lime, juiced2 piece
  • palm sugar1 tbsp
  • dried shrimp (optional)1 tbsp

Method

  1. 1

Pound garlic and chili in a mortar to a rough paste.

A few uneven chunks is the goal — not a smooth paste.

  2. 2

Add palm sugar and pound until dissolved.

  3. 3

Stir in fish sauce, lime juice, and dried shrimp; bruise gently.

  4. 4

Add halved cherry tomatoes and crushed peanuts; bruise to release juice.

  5. 5

Pile in shredded green papaya; pound and toss with a spoon to coat.

Pound and lift, pound and lift — don't crush the papaya.

  6. 6

Taste — it should be sour first, then sweet, salty, hot. Adjust and serve immediately.
